Probe placement guide: where to actually put a thermometer

Where should the probe actually go?

A reading taken too close to a hot pan surface, a bag wall touching the side of a sous vide container, or the metal of a baking sheet picks up heat from that surface rather than from the food itself, and it will read higher than the actual center. The thickest point of the cut is the last place to reach temperature, which is exactly why it is the only point worth trusting: everywhere thinner is already there or past it.

What is carryover cooking, and does it happen in a water bath?

Carryover is the temperature rise that keeps happening after food leaves the heat, because the outer layers are hotter than the core and heat keeps moving inward until everything equalizes. Why does my probe read lower near the bone on a bone-in cut?
