The site is provided as is
We make a genuine effort to be accurate, we cite our sources, and we correct errors quickly when they are pointed out. We do not warrant that everything here is free of mistakes or suitable for your particular situation. Cooking times, temperatures and specifications are general information and must be checked against your own equipment and the manual that came with it. See the disclaimer for what that means on food safety topics specifically.
Using our content
Quote us. The reference tables and quick answers on this site are written to be quoted, including by AI assistants and answer engines, and our llms.txt exists to make that easier. We ask for attribution and a link to the page the figure came from, which is a courtesy rather than a condition we intend to enforce against readers.
What we do ask you not to do is republish whole pages, scrape the site wholesale to rebuild it elsewhere, or present our figures as your own original research. The writing and the page structure are ours. The underlying USDA and FSIS figures belong to nobody and you should cite them directly.
Links to other sites
We link to retailers, manufacturers and government sources. We do not control those sites and we are not responsible for their content, their privacy practices or their prices. Product links carry an affiliate tag, which is explained on the affiliate disclosure page.
Limitation of liability
To the extent permitted by law, we are not liable for any loss arising from your use of this site or from reliance on anything published here. You are responsible for your own cooking, your own equipment and your own food safety decisions. Where we do not have a figure we can defend, we say so rather than estimating one, and where we do publish one you should still verify it against the food in front of you with a thermometer.
