How long does tuna steak take by thickness?
The figures below are come-up times: how long the centre takes to reach the temperature of the bath around it. They are calculated, not measured. The model is one dimensional conduction, where time scales with the square of thickness, and a slab shape is assumed. A flat slab is the slowest common shape, because heat only arrives from two faces.

Why thickness and not weight
Heat enters through the surface and travels inward, so the only distance that matters is from the surface to the centre, which is half the thickness. Weight tells you nothing about that distance. Two steaks of identical weight, one wide and thin and one narrow and thick, need very different times, and the thick one needs roughly four times as long if it is twice as thick.
This is also why the table stops at come-up time. Once the core is at temperature, a tender cut is done. A tough cut is only beginning: collagen conversion takes hours at temperature and is unrelated to thickness. Those are two different clocks and conflating them is the most common sous vide mistake after not sinking a floating bag.

Does weight change the sous vide time?
No. Heat travels into a piece from its surface, so the distance to the centre is what matters, and that distance is half the thickness. A wide thin steak and a narrow thick one can weigh the same and need very different times. Measure the thickest point with a ruler, not the scale.
Is 115 F safe?
115 F is a texture target, not a safety statement. The USDA safe minimum internal temperature for this category is 145 F. Below that figure, safety depends on holding the core at temperature long enough to reach the required log reduction, and those times come from the FSIS Appendix A tables for your specific product.
