How long does pork belly take by thickness?

Why thickness and not weight

Heat enters through the surface and travels inward, so the only distance that matters is from the surface to the centre, which is half the thickness. Weight tells you nothing about that distance. Two steaks of identical weight, one wide and thin and one narrow and thick, need very different times, and the thick one needs roughly four times as long if it is twice as thick.

This is also why the table stops at come-up time. Once the core is at temperature, a tender cut is done. A tough cut is only beginning: collagen conversion takes hours at temperature and is unrelated to thickness. Those are two different clocks and conflating them is the most common sous vide mistake after not sinking a floating bag.
