What you can skip
Skip the reusable silicone bags if you plan to do long cooks or freeze anything. They are a genuine convenience for an hour of vegetables and they do not pull a real vacuum, which is what you want for a long anaerobic cook. They are on the list as an addition, not a substitute for the sealer.
What to upgrade first
A chamber sealer, and only when you find yourself freezing stock into blocks so you can seal it. That is the signal. Until then the external sealer plus a freezer covers the same ground for a fraction of the money.

Why do I need magnets or weights?
Because a floating bag has an air pocket in it, and air is an insulator. The part of the food sitting in that pocket never reaches the temperature of the bath, which means your come-up calculation was wrong for that piece and any safety assumption behind it was too. A few dollars of magnets removes the problem.
Do I need a dedicated sous vide container?
Not strictly, but a cut lid is only available for containers designed for it, and a stock pot loses far more heat through its walls. A twelve quart polycarbonate container with a hinged lid and an insulating sleeve holds temperature with less work from the element and does not tie up a pot.
Can I sous vide without a vacuum sealer?
For short cooks, yes. Water displacement works well: lower a zip bag into the water and let the pressure push the air out before sealing the last corner above the surface. For long cooks, freezing and anything where you want a genuine vacuum against the food, a sealer earns its place.
Does a more expensive circulator hold temperature better?
